It has been so hot in Chicago this past week it’s hard to even think about turning on the oven or eating hot food. I’m looking forward to some real fall weather so I can cook up some soups and chili. In the meantime, here is what I had yesterday.
Breakfast: My schedule changed this week and I now teach a later class on Monday mornings. This meant an earlier breakfast. I meal prepped on Saturday by making banana almond muffins I found on Joy Bauer’s website. They are delicious and full of fiber. I added some crushed walnuts on top for some crunch. I ate a muffin before I taught and a banana after class on my way home.
Snack: When I got home I made a green matcha smoothie as I was still a little hungry and craving a pick me up. Since I try to limit myself to one cup of coffee per day, when I still feel sluggish after my coffee I make my matcha smoothie. I’ve received a few questions about matcha so I’m planning to write a blog about matcha in the future but in the meantime, I can tell you that my main reason for using matcha is for the energy and calm focus it provides along with boost of antioxidants.
Lunch: For lunch I grabbed some leftover greek salad we had made Sunday night. Simple, delicious, and nutritious! I wasn’t 100% full after my salad so I ended up having a slice of toast with guacamole.
Snack: I happened to see this almond milk based dairy-free yogurt at Whole Foods this weekend when I was grocery shopping and decided to give it a try. I brought it to work to have for my afternoon snack and I was hoping to have an alternative snack to recommend to dairy-free clients, but unfortunately, I won’t be recommending this to anyone. If it’s not tasty and I won’t eat it, then I definitely wouldn’t recommend it to my clients. There are so many food options these days that it doesn’t make any sense to settle for anything you don’t enjoy. After all, food is meant to be enjoyed!
Dinner: Since I had to work late my husband was in charge of making dinner. We love getting whole grain pizza dough and pizza sauce from Whole Foods and making our own pizzas at home. Andrew’s (my husband) go-to pizza is sausage and jalapeños while I love goat cheese, grapes, and prosciutto. Pizza is a major weakness of mine and this meal is an extra treat to make this Monday a little more enjoyable.
