Crunchy, Nutty Granola


2 cups rolled oats
1/2 cup maple syrup
1/2 cup mixed nuts (sliced almonds, pumpkin seeds, sunflower seeds, pecans, walnuts)
3 Tbsp coconut flakes
1 tsp cinnamon
1 tsp unrefined coconut oil
1/4 tsp salt


Preheat oven to 325 degrees F. Cover sheet pan with parchment paper. Mix together all the ingredients and spread granola evenly on sheet pan. Bake for 10 minutes, toss, and then bake for 10 more minutes. Let cool and enjoy!
